Bella’s Carnivore Nachos
Crunchy, cheesy, and completely grain-free, Bella’s Carnivore Nachos are the ultimate “game day” hack. Instead of corn tortillas that spike your insulin, this recipe uses protein-dense animal products like crispy chicken skins, pork rinds, or even “meat chips” to carry the load. Smothered in seasoned ground beef and a rich, creamy cheese sauce, these nachos provide all the texture and flavor of the traditional version while staying 100% animal-based.
The “Chip” Options
The foundation of a good nacho is the crunch. Here are the three best carnivore-approved bases:
- Crispy Chicken Skins (The Gourmet Choice): Lay chicken skins flat on an air fryer tray. Salt them heavily and air fry at 425°F for 8–10 minutes until they are hard and chip-like.425°F for 8–10 minutes This is the most authentic “crunch” you can get.
- Pork Rinds (The Quickest Choice): Use high-quality, plain pork rinds. They provide an immediate, sturdy base that can handle heavy toppings.
- Cheese Whisps: Place small mounds of shredded Parmesan or cheddar on parchment paper and bake at 400°F until the edges are brown and they become crispy crackers.
The “Beef & Cheese” Toppings
To make these true nachos, you need more than just salt:
- The Meat: Brown 1/2 lb of ground beef (or ground brisket) in a skillet. Season with plenty of salt and, if you tolerate spices, a hint of cumin and chili powder.
- The Cheese Sauce: Avoid “plastic” processed cheeses. Instead, melt 2 oz of sharp cheddar into 1/4 cup of heavy cream over low heat, whisking until smooth and velvety.
- The Assembly: Pile your chosen “chips” on a plate. Spoon the hot ground beef over the top and drizzle with the warm cheese sauce.
Pro-Tips for Maximum Satisfaction
- Watch the “Sog” Factor Pork rinds and chicken skins absorb moisture quickly. To keep them from getting soggy, serve the nachos immediately after assembly. If you’re doing a large tray, consider keeping the cheese sauce in a side bowl for dipping to preserve the “chip” integrity.
- The Broiler Finish If you want that “restaurant style” where the cheese is bubbly and browned, assemble your nachos (minus the liquid sauce) on a metal tray and pop them under the broiler for 60 seconds. Then, pour your warm cream sauce over the top at the very end.
- Carnivore “Garnish” Traditional nachos use jalapeños and onions. For a 100% meat version, garnish with crispy bacon bits or finely crumbled hard-boiled egg yolks to add extra color and a rich, savory “pop.”
- The Sour Cream Hack A dollop of full-fat sour cream or cold Greek yogurt provides the perfect temperature contrast to the hot beef and cheese, mimicking the traditional nacho experience.
Are you planning to go the extra mile by air-frying your own chicken skin chips, or are you looking for the convenience of a bag of pork rinds?
Bella’s Carnivore Nachos
Traditional nachos are a no-go on a carnivore diet, but this version uses "Carnivore Crisps" (thinly sliced, dehydrated chicken breast) to provide that essential crunch. By layering the chips with pre-cooked ground beef and plenty of shredded cheese in the air fryer, the cheese acts as a delicious "glue" that binds the protein together. It’s a fast, satisfying dish that hits all the salty, cheesy notes of the original.
Ingredients
- 1 bag approx. 1.5–2 oz Chicken Breast Carnivore Crisps
- 3/4 lb ground beef pre-cooked and crumbled
- 2 cups cheese shredded (such as sharp cheddar, pepper jack, or a Mexican blend)
- Optional: Sour cream and hot sauce for dipping
Instructions
- Prepare the Tray: Line the bottom of your air fryer basket or tray with a piece of parchment paper. This prevents the cheese from sticking to the basket and makes cleanup effortless.
- Layer the Base: Place a single layer of the chicken breast chips across the bottom of the tray, overlapping them slightly to create a sturdy base.
- Build the Layers: Sprinkle a generous layer of shredded cheese over the chips, followed by a layer of the pre-cooked ground beef.
- Repeat: Add another layer of chicken chips, followed by the remaining cheese and ground beef. Feel free to add any other carnivore-approved toppings at this stage, such as crumbled bacon or steak bits.
- Air Fry: Slide the tray into the air fryer. Cook at 350°F for 5 minutes.
- Check for Melt: The nachos are done when the cheese is completely melted, bubbly, and just beginning to turn golden at the edges.
- Serve: Carefully lift the parchment paper to slide the nachos onto a plate. Serve immediately while the cheese is hot and stretchy.
- Dipping: Enjoy as-is, or serve with a side of sour cream and a dash of hot sauce if desired.
- Storage: These are best enjoyed immediately to maintain the crunch of the chips. If you have leftovers, store them in the refrigerator for up to 2 days and reheat in the air fryer at 350°F for 2–3 minutes.
