Adding a raw egg yolk to your ground beef is a classic chef’s secret for creating a richer, more cohesive burger that stays moist even under high heat. This method produces a decadent, tender patty that pairs perfectly with the velvety finish of melted cheese. By finishing the burgers under a lid, you trap the steam to perfectly drape the cheese over the meat, ensuring every bite is the ultimate carnivore indulgence.

Ingredients
  

  • 1 pound ground beef
  • 1 large egg yolk
  • 1 tablespoon beef tallow or butter
  • Hard cheese of choice sliced (such as cheddar or Swiss)
  • Salt and seasonings to taste

Instructions
 

  • In a medium mixing bowl, combine the ground beef and the egg yolk. Use your hands to mix until the yolk is well incorporated throughout the meat.
  • Form the mixture into patties of your preferred size and thickness. Season both sides with salt or your choice of spices.
  • Place a large skillet or cast-iron pan over medium-high heat and add the tallow or butter. Once the fat is melted and the pan is hot, add the patties.
  • Cook the patties for approximately 3 minutes per side to develop a savory, golden-brown crust.
  • While the second side is searing, slice your cheese. Place the cheese slices on top of each burger patty.
  • Reduce the heat to medium-low and cover the pan with a tight-fitting lid. Cook for an additional 2 to 3 minutes; the trapped residual heat will melt the cheese thoroughly until it is glossy and clinging to the beef.
