Bella’s Instant Pot Chuck Roast

Chuck roast is the quintessential comfort cut, known for its deep beefy flavor and the beautiful ribbons of fat that melt away during slow cooking. By utilizing the "Sauté" and "Pressure Cook" functions of the Instant Pot, you can achieve a perfect brown sear and a tender, pull-apart texture in a fraction of the time it takes in a traditional oven. Finishing the roast with a natural pressure release ensures the muscle fibers remain relaxed and succulent, creating a rich, self-saucing meal that is as nourishing as it is satisfying.

Ingredients
  

  • 2 tablespoons butter
  • 2 cups beef bone broth or water
  • Salt and seasonings to taste (optional)

Instructions
 

  • Turn on the "Sauté" function on your Instant Pot and set the timer for 30 minutes. Place the lid on top (but do not seal) to allow the inner pot to preheat thoroughly for about 5 to 10 minutes.
  • Add the butter to the hot pot. Once the butter is melted and beginning to foam, place the chuck roast inside. Sear the meat for about 3 minutes per side until a deep, brown crust has formed on all surfaces.
  • Cancel the "Sauté" function. Carefully pour the beef bone broth or water over the roast, using a wooden spoon to scrape up any browned bits (fond) from the bottom of the pot to prevent a "burn" notice.
  • Secure the Instant Pot lid and ensure the steam release valve is set to the sealing position. Select the "Pressure Cook" or "Manual" setting and set the timer for 50 minutes on high pressure.
  • Once the cooking cycle is complete, allow the pressure to release naturally. This typically takes 20 to 30 minutes and is essential for keeping the meat tender.
  • Carefully remove the lid and use two forks or tongs to manually pull the beef apart into thick, succulent shreds directly in the cooking liquid.
  • Serve warm in deep bowls with a ladle of the cooking juices. Leftovers can be stored in an airtight container in the refrigerator for up to 5 days and reheat beautifully on the stovetop over low heat.
