Bella’s Ground Beef Egg Yolk Cups

These beef yolk cups are as visually impressive as they are nutritionally dense, creating a self-contained "bowl" of protein with a rich, golden center. By partially cooking the beef before adding the yolks, you ensure the meat is fully browned while keeping the yolk perfectly jammy and liquid. It is a quick, high-fat meal that feels like a gourmet breakfast or a savory snack, providing a powerful punch of vitamins and healthy fats in every bite.

Ingredients

  • 1/2 pound ground beef
  • 2 large egg yolks raw
  • Salt and seasonings to taste (optional)

Instructions

  • Split the raw ground beef into two equal portions. Shape each portion into a cup-style mold with a flat bottom and high sides, ensuring the hole in the center is wide and deep enough to accommodate a yolk later. Season the meat with salt or spices if desired.
  • Place the beef cups into the air fryer basket, ensuring they are sitting flat so they do not tip over during the cooking process.
  • Air fry at 380°F for 5 to 6 minutes until the beef is mostly cooked and has begun to develop a light crust.
  • Carefully slide the air fryer basket out. Gently drop one raw egg yolk into the center of each beef cup.
  • Place the basket back into the air fryer and continue to cook at 380°F for an additional 3 minutes.
  • For a "jammy" consistency where the yolk is warm but still liquid, ensure you do not exceed 3 minutes of additional cooking time. If you prefer a more set yolk, you may add 1 to 2 minutes.
  • Carefully remove the cups from the air fryer and serve immediately. These are best enjoyed fresh to appreciate the contrast between the hot beef and the creamy yolk. If you have leftovers, store them in an airtight container in the refrigerator for up to 24 hours and reheat very gently to avoid overcooking the yolks.
