Bella’s Carnivore Muffins

These portable, protein-packed muffins are a brilliant solution for meal prepping or a quick on-the-go breakfast that fits perfectly within a carnivore lifestyle. By using ground beef as a savory "crust" for a fluffy scrambled egg center, you create a satisfying texture contrast that feels more like a complete meal than a simple snack. They are incredibly versatile, holding their shape beautifully and providing a dense source of energy to power you through your day.

Ingredients
  

  • 1 pound ground beef
  • 4 to 6 large eggs scrambled
  • Salt and seasonings to taste (optional)

Instructions
 

  • Preheat your oven to 350°F. Prepare a standard 12-cup muffin tin by lightly greasing the wells with a bit of beef tallow or butter if desired, though the fat from the beef will naturally prevent sticking.
  • Distribute the ground beef evenly among the muffin cups, filling each one about two-thirds full. Use your thumb or a small spoon to press the meat against the bottom and sides, creating a small "well" in the center of the beef.
  • Carefully pour the raw scrambled eggs into each well, filling the tins the rest of the way to the top. Season with salt and your choice of spices if desired.
  • Place the muffin tin in the oven and bake for 20 minutes. At this stage, the eggs should be set and the beef fully cooked.
  • For a more textured experience, you may continue to bake the muffins for an additional 3 to 5 minutes until the edges of the beef turn deep brown and become slightly crispy.
  • Remove the tin from the oven and let the muffins rest for 2 to 3 minutes before using a butter knife to gently pop them out of the wells.
  • Serve warm. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. These reheat exceptionally well in an air fryer or oven at 350°F for 5 to 7 minutes to restore their crispiness.
