Bella’s Beef Burger Patties

There is nothing quite like a perfectly seared beef burger to satisfy a carnivore craving, and this high-heat method ensures a restaurant-quality char while keeping the center tender and juicy. By focusing on a quick, intense sear, you lock in the natural fats and juices of the ground beef, creating a flavorful crust that pairs beautifully with a simple pat of butter. It is a foolproof technique for anyone looking to master the art of the basic burger without overcomplicating the process.

Ingredients

  • 1 to 2 pounds ground beef
  • Salt or spices to taste
  • Butter or cheese for topping (optional)

Instructions

  • Place a large cast-iron skillet or heavy-bottomed pan over high heat and allow it to preheat until it is nearly smoking.
  • While the pan heats, shape the ground beef into patties according to your preferred size and thickness. Season both sides of the patties generously with salt or your choice of spices.
  • Carefully place the patties into the hot pan. Sear on the first side for 3 minutes without moving them, allowing a dark, crispy char to develop.
  • Flip the burgers and sear the second side for an additional 3 minutes. This timing will result in a rare interior with a well-developed crust on the outside. If you prefer your burgers medium or well-done, continue to cook for an additional 2 to 4 minutes.
  • Remove the patties from the heat and top immediately with a slice of cheese or a pat of butter if desired, allowing it to melt over the hot meat.
  • Serve warm. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently in a pan over medium heat or in an air fryer to maintain the exterior texture.
